Paulette Licitra is a New York native, and now a Nashville transplant. She’s been teaching Italian cooking in Nashville, Tennessee since 2009. She leads small groups to Italy every year to cook and explore regional cuisines. Paulette completed her professional culinary studies at the Institute of Culinary Education (ICE) in New York City, and worked at Mario Batali’s Lupa restaurant. She’s studied with home cooks and chefs all over Italy, including the regions of Lazio, Campania, Sicily, Tuscany, Puglia, Liguria, Emilia-Romagna, and the Veneto, and lived in Rome during her undergrad studies. Paulette is also appears frequently on the Nashville NBC affiliate WSMV-TV. Her writing has appeared in the New York Times, Chicago Tribune, and other publications. She was founder and publisher of the literary journal, Alimentum-The Literature of Food. Her first cookbook, Italian Cooking Party, inspired cooks to host their own Italian cooking parties. Her most recent cookbook The Easy Italian Cookbook was published in April 2020. She is a charter member of the Nashville chapter of Les Dames d’Escoffier. Channel 4 WSMV’s Today in Nashville.

    • Hi Wes, classes are full dinner menus — not just dessert, but includes a dessert. Classes are sold out thru beginning of April. New schedule will come out in February for the spring and send by email. If you like give me your email address and I’ll add it to the announcement list. Thanks!

  7. Hi! I am interested in a pizza making class. Specifically, dough making & how to stretch it. Also, how to make homemade pizza sauce. Do you offer any classes like this?

    • Hey Ashleigh, from time to time I do pizza-making classes but not all the time. (Includes the sauce & toppings!) if you’d like to get my class schedules send me your email address and I’ll add you to the list. Next schedule will be spring — announced in February. Thanks!

    • Hi Angie, I’ll add your name to my email announcement list. This fall I’m not putting out a schedule because I’m traveling to Italy and have many private cooking parties booked. A new class schedule will come out in November for the Jan-March calendar. Thanks so much!

      Thanks for your note! My summer schedule will be out in a week or so, I’m just working on it now — I may have a class on the 29th but can’t promise there will be 4 spots available. And to be fair, I can’t reserve before I send it out to my whole list. Hope that makes sense…thanks again!

    • Hi Ashlly, No, I don’t do classes on Sundays — I do on some Saturdays. ButI’m booked up thru the end of March. New spring schedule comes out tomorrow – but I’d need your email address. Thanks!

  19. Hello chef Paulette. I have a recipe from Relish Magazine for Regina Cookies. I want to make for Christmas. Can you tell me if the 2 Tablespoons of vanilla is correct, just want to make sure there isn’t a typo. I am anxious to try these and love that yours are so great looking by using the unhulled sesame.     • Hi Denise, So happy you’ll be trying the cookie! Yes, 2 tablespoons is correct (I know it seems like a lot more than the usual). The vanilla flavor comes through nicely in the cookie. Thank you! Let me know how they turn out.

    Hello Chef Paulette, I would love to have you come to my home for a private cooking session with my family (total of 6 people) to teach us how to cook eggplant and perhaps something else vegetarian. My son is away at college, but will be home for Christmas. He recently attempted to cook his own Thanksgiving meal of eggplant by himself while away at school and had to throw everything in the trash. He ate Jack n the Box Thanksgiving. HELP. He will be home for the Christmas time period.
